A revolutionised chocolate bar feasted on at The Trustee Bar & Bistro


When I heard that there was a restaurant in Perth that had a dessert called the Snickers Bar I pretty much knew then and there that I had to pay it a visit stat. But luckily enough for me, one of my closest friends Linda's birthday had rolled around and instead of gifts she and I like to treat one another to a nice dinner out. Immediately I knew that The Trustee Bar & Bistro was our place to go!


I've only ever had drinks upstairs at The Trustee and experienced their chef's culinary skills at Eat Drink Perth 2014's First Feast. That night was one of truly delicious food and so I had big hopes for our dinner on this evening. The restaurant downstairs is dark and intimate, lit by candles with soft sheer curtains lining the windows.

I love the warehouse loft feel of the space, and the way they work natural materials in like a beautiful wooden board holding the menu against it. The food selection is suitable for a bistro but with an elegant European twist. Think duck rillette, lasagne, chateaubriand and other very delicious sounding items. Feeling very torn over several menu items (surprise, surprise) Linda and I eventually make our decisions and place our orders with our lovely waiter (who was just fantastic all night - he possessed that right balance of attentive without being intrusive).

Knowing we both want dessert that evening we decide to share an entree rather than order one each. The antipasti plate ($18.50) could serve one but it was a nice amount for us to start off on. There's melt in your mouth proscuitto, soft grilled slices of chorizo, olives, a ricotta topped mushroom, blue cheese tart and a fried mac & cheese ball sitting in a wasabi aioli.

The proscuitto is just incredible. Soft, moorish and just the right kick of salt. The chorizo is actually one of the best I've ever tasted - lightly smokey, and really quite soft which is a nice change to how chorizo is normally too hardened.

The blue cheese tart is pretty fantastic and it's at that point that I know without a doubt I'm going to love this meal here at The Trustee. The pastry is so short and buttery, crumbling as I bite down. The blue cheese filling is tart but not overpowering, complimented by the smattering of herbs over the top. I finish up my bites on the plate by trying the mac & cheese ball. I mean it's fried pasta, so you know it's going to be great! The wasabi aioli is a strange flavour pairing but I actually quite like it though Linda's not a big fan (mind you, she doesn't like wasabi so there was no trying to win her over with this).


When our entree plates are cleared I'm feeling pretty ready for our mains. We've both ordered red meat dishes which is actually quite different for us both - normally we're the type to hunt down pasta or seafood. And while I was so captivated by the sound of the Cone Bay barramundi (which I ate at the First Feast), our waiter convinced me to order the lamb - it couldn't be missed!

Linda's dish of choice is as pretty as a picture - a glossy mound of slow cooked beef cheek atop pearl couscous and accompanied by a beetroot puree ($33.00). There's something so utterly enthralling about a melt in your mouth piece of beef cheek. It gets that sticky, satisfying and perfect glaze to it while the meat basically dissolves the minute it touches your tongue. I loved how this dish looked and definitely how it tasted!



My lamb osso bucco with pearl barley risotto ($39.00) might possibly be one of my favourite lamb dishes ever. And I eat a lot of lamb (and a lot of risotto!). The meat was impossibly tender, with just the right ratio of meat to fat. Soft and juicy, my fork barely has to work as I prod it away from the bone. I like the crispy edges and of course the decadent bone marrow that is sitting enticingly waiting for me to slurp it up. It's like eating butter - extra, extra flavour.

The pearl barley risotto is nutty and well cooked, with a hint of creaminess and some lovely bursts of flavour from the mushrooms and herbs. Having the pea shoots and tendrils is a nice addition of freshness which I really enjoy.


While we definitely didn't need it, we agree to share a side of fries ($10.50) which come dusted with paprika salt and with a side of dill aioli and vinegar. They're a little pricey I think but when I see the size of the bowl I can see why! They're very generous and we both know we have no chance of finishing them.

The fries are crisp on the outside and soft and fluffy inside, and the paprika salt is a great addition that gets my tastebuds tingling. The best part is definitely that dill aioli. Dill is one of my favourite herbs and it's just so fresh and zingy in the sauce. It's something I want to try to make myself so I can enjoy it all the time!



If I'm being honest with myself I could have probably stopped after our mains but both Linda and I were committed to ordering the snickers bar ($15.00) dessert... each! Atop a crunchy peanuty base sits the lightest, fluffiest chocolate mousse encased in a soft chocolate layer. There's a salted caramel parfait next to it with tasty vanilla wafers, all of which is carefully placed on a slick of caramel with some chocolate crumb. 

One bite in and I think I'm having a moment. It reminds me more of a mars bar than a snickers thanks to the mousse but my god it's good. Sweet, decadent and just light enough that it doesn't make you feel ill. The strawberry is definitely a requirement to bring in that sweet sourness as a mechanism to cut through the richness every now and then. 

I can see why it's their signature dessert and everyone seems to be talking about it on social media. The hype is definitely accurate that's for sure. 


What an amazing feast! I can't believe it took me so long to go to The Trustee, but I can definitely say it will be a quick return given how impressed I was with this place. And to make it even better, I used my entertainment card to get 25% off up to $50 making it a very affordable meal indeed! The perfect birthday treat for one of my favourite people in the world. Yummy!

  1. Oh gosh, Kristy...those mains look AMAZING!!! the lamb looks tender even in a photo, and look at that gloss of the beetroot puree in the beef dish! As for the dessert..."snickers bar". Enough said. My favourite choc bar immortalised to look like that...need to find someone to come here with me! haha. Thanks for sharing the beautiful pics!

    1. It was such a lovely dinner! The lamb definitely was tender, I'm craving more already!! Everyone I've told about the snickers bar dessert is planning a trip to try it :)

  3. Beautiful photos hunny, I had a really disappointing time at the Trustee, poor service and the wait staff were clueless about GF. Shame because the food was quite good. Its been a while now, and looks like its worth giving them a second chance!

    1. Thanks my love! That's so disappointing to hear - I think us going on a weeknight meant they could be really attentive. Hopefully if you go back again they'll be more GF aware and friendly :)
