Believe it or not I'd actually never heard of a hummingbird cake until maybe a year ago, but never tried it until recently. Spending a night in watching Jamie Oliver's new series Comfort Food I watched as he created a beautiful and bright cake that definitely sent my tastebuds into a fit of jealousy. That weekend I decided to recreate it and finally get to try this famed dessert.
For those of you unfamiliar with a hummingbird cake, it's actually quite reminiscent of a carrot cake, however the signature ingredient (carrots) are replaced by banana and pineapple. It definitely sounded intriguing and after reading the recipe, I realised it was just as easy to make.
One thing about my baking style is I like to give it my own spin when I follow recipes, much to the boy's chagrin. I know logically it's always best to make something and then do your own twist the next time but I just love following my nose and instincts to see if it works out. Thankfully this time around it did!

ReplyDeleteIt was a pretty big sized cake so I gave some away - I bake so often we always end up with lots of leftovers haha :) definitely love putting my own spin on recipes, it's part of the fun!
