Wet weather weekends are the perfect time to bring out the hearty dishes, which is exactly what we did one Saturday recently while curtains of rain poured down outside. My boy had stopped by the butcher earlier in the week to pick up some beautiful plump beef cheeks, and while we normally go down the route of a classic slow braise accompanied by mash, we decided to try something different this time around.
After a bit of research we discovered this wonderful recipe for beef cheeks with saffron risotto on the Gourmet Traveller website. We didn't quite have the right ingredients so I've listed it as I made it below, but if you'd like the original recipe here it is - which I'm sure is better than my rendition! But in saying that, we really loved the result and it was definitely all we needed to warm our bones on such a windy day.
